Healthy Eating Transition Training

Everyone knows that we need healthy foods, thoughts, emotions and activities but not everyone knows where to start. People come to me when they are ready or when they really have to detox.
I have led workshops ranging from ‘What to shop for, when you have a child who is intolerant to dairy’, to ‘Vegan cooking, to tempt a meat eater’, through to ‘Party catering, without using refined sugar’.
People usually come in ones and twos, to learn or stay B&B or enjoy a vegan organic meal, out. Sometimes, I deliver meals on wheels. I got the kitchen HACCP-approved so I can produce my lovely range of organic raw lunches but, in the meantime, I can support you in any changes you want to make.
Today, more than 95% of all chronic disease is caused by food choice, toxic food ingredients, nutritional deficiencies and lack of physical exercise.
Some say that it is not what you eat but what you don’t eat that keeps you healthy. And that led me to explore many things:
Meatless diet:
- I took meat off my plate and went plant-based – read ‘why’ here.
Let go of the dairy:
Eat raw food:
- If it can be eaten raw, I don’t cook it. I manage about 70%
Fasting:
Growing own food:
Chlorine-free:
Ceramic coasters:
- Another thing we can do together is make ceramic coasters
No sugar:
Being a beatharian:
- I practice just ‘breathing in’ the vitamins and minerals I need from the atmosphere, like a Breatharian. I love it, sense the benefits but can’t vouch for it!
There are over 100 trillion organisms in the gut, that make up ¾ of our immune system.
Boost your immune system:
- Instead of tea or coffee first, I have a tiny sprinkle of Turmeric in hot water in the morning. The Ayurvedic health system says it boosts your immune system and here are more benefits again
- I only put food-grade oils on my skin, usually coconut oil, even though in Ireland it cannot be ‘locally sourced’!!!
Wild Food:
- Foraging for Wild Food
…and a million more favourites like toasted pumpkin seeds, yeast free bread, organic lemon, apple cider vinegar and brilliant meat alternatives.
How your body reacts when your diet consists of 51% or more of cooked foods
Paul Kouchakoff M.D. a doctor from Switzerland was the first to show from this research in the 1930’s that if you eat a diet consisting of 51% or more of cooked foods, that your body reacts as if it were being invaded by a foreign organism.
Your body reacts this way because, even if the food is lightly steamed, the enzymes within the food are lost. Enzymes are key to digestion and they are key to the use of nutrients by the body. Without the presence of these enzymes your body treats the cooked food as a toxin and goes into a state known as ‘leukocytosis’.
Digestive leukocytosis generates white cell acivity against the cooked food you’ve eaten because the cooking process has bastardised the molecular integrity of the food in a way that makes it appear as a toxin.
Dr. Kouchakoff also showed from his research that if 51% of more of your diet consisted of raw foods that you would have no leukocytosis. Meaning that your imune system would not be activated with a false alarm.
Organic brands are not a pricey range that you could never afford. It is really worth shifting your mindset to thinking right, just eat less, but real, non-contaminated food. Organic simply means that an ingredient has ‘not been dowsed repeatedly in carcinogenic chemicals at every stage of growing, ripening and preservation’.
Everything, except potatoes and meat can be eaten raw. Grate it, chop it small, marinade it. If it’s beans, soak them and sprout them, if it’s nuts, they are even better for you, if soaked overnight. Soon you will only like the taste of raw dishes. The internet is full of amazing recipes: the place to start is, what do I have in my cupboard? Then tap into Google, ‘raw recipes with …carrot’ (or whatever you have) and a whole new world of possibilities will open up to you!
In addition to the health benefits of avoiding animal proteins and other ingredients, there are also benefits for the environment because of the big impact and water footprint of raising animals. What got me going, many years ago, was this line of reasoning and it still makes me smile.

Why minimise your exposure to Wifi?
Wifi signal is 2 million hertz more powerful than your Electrics Electro Magnetic charge.
Turn off your router when you’re going to bed. Electricity registers in the 50 hertz range, wifi registers in the 2-4 gigabyte range. That makes wifi 2 million hertz more damaging to your body. Yes I know those signals are everywhere but make sure they’re not homing in on you.
Use a Lead to Your Computer
I use a lead now and only wifi when guests are here. Before you go to a doctor with headaches, fibre neuralgia, stress or a life threatening disease don’t look any further than your internet. We can mind ourselves a lot better than we are. Talking of guests. I had a couple here who designed mobile phones. They said, having worked all over the world, companies are only interested in designs that are smaller and faster. It was never in their remit to make one that was more safe to use, with less microwave and radiation emission.
More Speed but No More Safe
So, yet again, that means the industries aren’t looking out for you. We must do that for ourselves. Do you remember when Veronica Geeran was killed. The most damaged side of the brain was where she had held her mobile phone constantly. So talk on speaker if you have to talk at all and then catch up properly face to face! Its old fashioned I know, but worth it! Also, turn off the internet on any phones you have by your bedside, or otherwise they will be looking around for a signal too all night.
Even hearing this information again now, will be part of your healing….if you can let it change the way you mind yourself.
Be well!
